Red Lentil Soup




Red Lentil Soup Serves 4






What you'll need


165 g (or 1 cup) red lentils

1 red onion

2 or 3 cloves of garlic

4 medium carrots, diced

4 tablespoons of crushed tomato (canned)

1 teaspoon cumin

1 teaspoon paprika

1/4 teaspoon cinnamon

1 large handful of fresh coriander with stems (or parsley)

2 litres of room temp water

Salt



How to make it


  1. Give the red lentils a good rinse in cold water before cooking. No need to soak them.

  2. Cook the chopped onion in olive oil with cumin, paprika & a little salt, then add the carrots.

  3. Let it cook for 1-2 minutes, then add the chopped garlic. Allow for another 1-2 minutes cook time, stirring to ensure garlic infuses well.

  4. Cover with water, and add the cinnamon.

  5. Bring to a boil (approx. 5 minutes), then add the lentils, crushed tomato and chopped coriander with stems.

  6. Cook for 15 minutes on low heat. Stir now and then and add salt to taste if required.

  7. When the carrots are soft to the fork, it's ready! Simply throw it in a blender, give it a buzz and enjoy.
